• 6 Tb. coconut oil, melted
  • 2/3 cup unsweetened cocoa powder, Valhrona or Scharffenberger
  • 2/3 cup sugar
  • 2/3 cup dark brown sugar, packed firmly
  • 3 large eggs
  • 1/2 cup brown rice or all purpose flour
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 cup chopped nuts, optional
  • Procedure
  • 1. Heat the oven to 375. Spray an 8 by 8 inch baking pan with vegetable cooking spray.
  • 2. Combine the melted coconut oil, cocoa powder, sugars and eggs in a large bowl and whisk to blend. Add the flour, vanilla and salt and mix gently. Add nuts if desired and spread into the prepared pan.
  • 3. Bake for 25 to 30 minutes, until a toothpick comes out clean. Cool and cut into squares.
I guess since we are stuck here for the duration we decided to make the best of things. I made do with the staples we have on hand and invented a delicious brownie recipes before we lose power! I will make these again as they are a bit less sinful than regular brownies- but only by a hair.
