• 6 Tb. coconut oil, melted
  • 2/3 cup Valhrona cocoa powder
  • 2/3 cup sugar
  • 1/3 cup light brown sugar
  • 3 large eggs
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 cup brown rice or gluten free oat flour
  • 1 cup chopped walnuts or pecans, optional
  • 1. Grease a 8 by 9 inch square baking pan with vegetable cooking spray. Heat the oven to 375.
  • 2. Combine the melted coconut oil and cocoa powder in a large bowl and whisk until smooth. Add the sugars, eggs and vanilla and blend well.
  • 3. Fold in the flour, salt and nuts and mix briefly. Scrape the batter into the prepared pan and bake until a toothpick comes out clean about 20 to 25 minutes.
  • 4. Cool completely and cut into squares.
Although I don’t have any allergies, or medical reason to avoid gluten, I do feel better when I don’t have too much of it. So being the dessert (specifically chocolate) lover that I am I came up with these delicious brownies the other day. I wanted something chocolate-y and figured out how to cut out the butter, chocolate and gluten. These are just as addictive mind you so enjoy them with some restraint, if you can.
